Cinnamaldehyde is found naturally in essential oils such as Sri Lankan cinnamon, cinnamon, patchouli, hyacinth and rose oils. It has two isomers, cis and trans. Commercially available cinnamaldehyde, whether natural or synthetic, is trans.
Cinnamaldehyde is a permitted synthetic flavor for food, used in the preparation of meat, flavoring, oral care products, chewing gum, confectionery flavor.
